Vietnamese style spring roll




One of my favorite appetizers is a spring roll. A great thing about them is that they’re healthy and you can modify them to your liking. It’s a tasty snack for after school or during a dinner party. Get creative when you make these and have fun!

Ingredients
  • Broiled and chopped all-white chicken breast (but you can also use other meats like beef, pork or shrimp
  • Carrots
  • Cucumbers
  • Lettuce
  • Basil
  • Cilantro
  • Bean sprouts
  • Half cup of vinegar
  • Half cup of Splenda
  • Sesame oil
  • Salt and pepper
  • Vietnamese rice paper
Steps
1) Season chicken breast with little bit of salt, pepper and sesame oil
2) Chop carrots and mix them with vinegar and Splenda
3) Soak rice paper in hot water until flimsy and soft
4) Add all the vegetables and ingredients that you want, fold it up and dip it in peanut sauce


Peanut Sauce
Mix one tablespoon of peanut butter and half tablespoon of hoisin sauce
